looong time

Yes. I have baked in the time since my last post. But it was all pretty boring stuff, and I didn't know where my camera cable was (we have since "made" one with a normal USB and a mini-B adaptor. Sunday night I set out to make my own pasta. And with the weather being cold, I thought lasagna would be perfect for it. Okay, the week prior I did make my own pasta and made ravioli, but I couldn't roll it thin enough, and even when it was, I swear it got thicker when I cooked it. But it did turn into perfect lasagna.






I also baked cookies and made oatmeal for the week at the same time. The cookies were pumpkin cookies (oh fall) and then the oatmeal was just the regular steel cut oats that take 20 mins to cook so I do a couple days' worth at a time.

COOKIES. This is the best dough. It's all springy and spicy. Yum!






The very best part is that I had some leftover cinnamon cream cheese frosting in the freezer, so I decided to try to do whoopie pies with it (rather than basic icing drizzles) and it was pretty much the best thing ever, but the cookie:frosting ratio was off, so I just did "open faced whoopie pies" with it. Super yum!!!!

Blueberry muffins

I love blueberries and it took everything I had the last week to not eat our CSA blueberries by the handful. So I finally made muffins today after restocking on baking soda, which, after I started, I found that the recipe does not call for baking soda. Super easy and yummy. I made them mini muffins with the muffin tin Jake's mom gave me last month. I even made them without liners, finally perfecting my greasing and flouring technique for the final pan. Sadly, that one is always my best :)

So now we have mini muffins to snack on and eat for breakfast all week. Yum.

Muffins!

Blueberry muffins are so easy. I need to make them all the time. Yum. We even were out of milk, so I used my vanilla-flavored half and half instead, and they still turned out delicious. Yum.

Cupcakes!! And I'll do orders :)

After making cupcakes for my mom's birthday in November, I have decided that I LOVE making cupcakes. And my cupcakes are REALLY GOOD. So that's my new thing. I just wish I had more events to make them for...so it is official: I can do parties :) I am going to start "advertising" soon (word of mouth, of course).

Caramel sauce fail....

I guess I need a new stove.....apparently medium on my stove doesn't get hot enough, so my caramel sauce turned into rock candy. New decision is that tomorrow, I will make dulce de leche...possibly in the slow cooker, then I can control the temp, and all I have to worry about is the water level. Hmm....but I did keep the temp pretty low-medium for fear of burning it, so it may just have been that patience is not a virtue when making caramel sauce....


Here it is looking like it's going pretty well.....





THEN ALL THE WATER EVAPORATED OFF....I tried to "swirl" it but there was nothing left to swirl.... :( maybe next time after I clean all the "rock candy" off the bottom of this pan.



On the plus side, I made this yummy fudge sauce and ate it on ice cream after I got home from work tomorrow....yum!!


Decision: I think I need a new stove.

Tuesday, January 19

Resolutions

1. Only photo-related one: make more yummy food and take photos of that. Up first this week: fudge sauce, caramel sauce, and cupcakes later this week.

2. Not photo-related, but: wear more skirts and dresses. The only new clothes I am allowing myself to buy this spring/summer are: work clothes, skirts, dresses, and tights/leggings. Shoes do NOT count as clothes.

3. Work out more: hence the new Y membership.

4. Read more books.
